1/2 cup corn meal 1/2 cup parmesan cheese 1 table spoon course ground pepper. Coat both sides of fillets completely. Coat pan with vegetable oil or vegetable spray. Bake fillets at 350 for 12 minutes. While fillets are in the oven you can make the optional garlic cream sauce. Pour 1/2 cup of real cream into a small saucepan. Mix in 1 tablespoon of fresh chopped garlic into the pan and simmer on low heat until cream reduces in half, add salt, pepper to your taste. Take about 4 - 1/2 lb. fish filets and remove all the bones and dark meat along the lateral line. (This is fat - tastes bad). Season both sides of the filets lightly with salt, pepper, season-all, or your favorite seasoning. Place the filets in a glass baking dish. Chop 1/3 onion & 1/3 green pepper and spread over the filets. Spoon a table spoon of melted butter over each filet. Bake for about 15 minutes at 350 degrees. Put one cup of milk in a small bowl, add one egg, whisk together. Dip any white fish fillet into mixture. Coat with crushed corn flakes on both sides. Place on baking sheet rubbed down with corn oil. Bake in oven at 350 until crumbs are golden light brown. While fish is cooking melt 1/2 stick of butter, put into it the juice from 1/2 lemon, 1 tbsp chopped parsley, 1 tbsp paprika, 1/4 tsb black pepper, 1/8 tsb cayanne pepper, stir together and serve by pouring over crispy fillets.
